Eu adoro comida indiana, sou super fã do sabor, do cheiro e da cor dos pratos indianos, e até os meus filhos que ainda são pequenos, já se habituaram a estes sabores diferentes mas extraordinários. </div>

1 colher de chá de sal de mesa</div>

2 peitos de frango sem pele, sem osso, aparados de gordura</div>

1 copo de iogurte grego </div>
<div>
2 colheres de sopa de óleo vegetal</div>

3-4 dentes de alho médios picados ou pressionado por um espremedor de alho</div>

1 colher de sopa de gengibre fresco ralado </div>

<b>Para o molho masala:</b></div>

3 colheres de sopa de azeite</div>

1 cebola média picada </div>
<div>
3-4 dentes de alho médios picados </div>

1 malagueta, picada e sem sementes (Deixe as sementes em para um molho mais picante)</div>

( Para fazer a sua própria, combinar 2 colheres de chá de coentros em pó, 1/4 colher de chá de cardamomo em pó, 1/4 colher de chá de canela moida e 1/2 colher de chá pimenta preta moída)</div>

1 lata de tomates em pedaços</div>

2 colheres de chá de açúcar</div>

Misture os cominhos, coentros, pimenta de Caiena e o sal numa tigela pequena. Polvilhe ambos os lados dos peitos frango com a mistura de especiarias, pressionando suavemente para que mistura adira. Coloque o frango num prato, cubra com papel aderente e leve ao frigorífico por 30 a 60 minutos. </div>

Numa tigela grande, misture o iogurte,o óleo, o alho e o gengibre; reserve.</div>

<b><u>Para o molho: *</u></b></div>
<div>
Aqueça o azeite numa frigideira grande em fogo médio até estar quente. Adicione a cebola e cozinhe, mexendo frequentemente, até estar dourada, 8 a 10 minutos. Adicione o alho, o gengibre, a malagueta, a pasta de tomate, a pimenta de Caiena e o garam masala; cozinhe, mexendo frequentemente, cerca de 3 minutos. Adicione o tomate pelado, o açúcar e o sal; levar a ferver. Reduza o fogo para médio-baixo, tape e cozinhe por 15 minutos, mexendo ocasionalmente. Misture as natas e voltar a ferver. Retire a panela do calor e tape para manter quente.</div>

De seguida adicione o alho, o gengibre, a malagueta, a pasta de tomate, a pimenta de Caiena e o garam masala e programe 3mns /Temp.100Cº/Vel.1 sem o copinho.</div>

Adicione o tomate pelado, o açúcar e o sal e programe 10 mns /Temp.100 Cº/Vel.1 </div>

Misture as natas e programe 5mns /Temp. 90Cº/Vel.1</div>

Enquanto o molho ferve, ligue o forno no grill Usando pinças, mergulhe o frango na mistura de iogurte (frango deve ser revestido com uma camada grossa de iogurte), forre um tabuleiro com papel de alumínio e coloque por cima uma grade, onde vai colocar o frango . </div>

Grelhe o frango no forno cerca de 20mns, até começar a ficar tostado, virando de vez em quando.</div>

Deixe o frango descansar 5 minutos, em seguida, corte em pedaços e misture no molho quente </div>

Polvilhe com coentros frescos e sirva acompanhado por arroz basmati. </div>

Coloque a manteiga, o açúcar e a baunilha no copo da bimby. Bata por 1 mn / Vel.3-4.<br />
Com a bimby ainda a funcionar, adicione o ovo através do buraco na tampa e continue misturando na Vel. 3-4 por 30 segundos.<br />
Adicione a farinha e sal, amasse em velocidade Espiga por 30 segundos.<br />
Adicione as pepitas de chocolate, e misture muito bem com uma espátula.<br />
Usando uma colher de gelado ou sobremesa , coloque num tabuleiro forrado com papel vegetal. deixando espaço ( a massa cresce muito). Asse em forno pre aquecido a 180Cº por 10-12 minutos.<br />
Deixe-as estar uns 5mns no tabuleiro e depois transfira para uma rede para acabarem de arrefecer<br />

A receita original retirei do site da bimby<br />
<br />
Ingredientes:<br />
200 g fruta cristalizada, ou frutos secos (eu usei fruta cristalizada mas também amêndoa laminada)<br />
150 g açúcar<br />
4 ovos<br />
130 g manteiga<br />
330 g farinha de trigo<br />
1 c. sopa de fermento p/ bolos<br />
1 pitada de sal<br />
<br />
Pré-aqueça o forno a 200°C. Unte com manteiga e polvilhe com farinha uma forma de bolo inglês.<br />
Coloque um recipiente sobre a tampa da Bimby pese 50 g de frutas cristalizadas e reserve.<br />
Coloque no copo 150 g de frutas cristalizadas e pique 5 seg/vel 3,5, retire e passe-as por um pouco de farinha. Reserve.<br />
Coloque no copo o açúcar e os ovos e programe 2 min/37°C/vel 5.<br />
Adicione a manteiga e misture 10 seg/vel 5.<br />
Adicione a farinha, o fermento e o sal e programe 15 seg/vel 3. Incorpore os frutos reservados e envolva com a ajuda da espátula. Deite o preparado de modo que fique pela metade da forma. Polvilhe com os frutos restantes e leve ao forno cerca de 45 minutos.<br />

O doce de abóbora é um dos meus doces preferidos, adoro para acompanhar com queijos.<br />
Abri recentemente um espaço no Porto, uma Horta Urbana Sustentável com uma pequena loja, onde além dos legumes da horta, vendo também compotas, picles, chutneys feitos por mim.<br />

Ingredientes:<br />
1 kg. 500 gr. de abóbora-menina descascada, limpa de sementes e cortada em cubos<br />
1 kg. de açúcar<br />
3 pauzinhos de canela<br />
1 copo de vinho do Porto<br />
<br />
Coloque num tacho os cubos de abóbora, os pauzinhos de canela. Junte o açúcar.<br />
Regue com um bom copo de vinho do Porto.<br />
Leve a lume brando e deixe cozinhar, suavemente, por algumas horas (cerca de 1h30mn). De vez em quando, mexa o seu doce com uma colher de pau.<br />
Quando vir que está a ficar espesso retire os paus de canela e passe com a varinha mágica.<br />
Volte a levar o doce ao fogão e deixe ficar em lume brando, mexendo ocasionalmente, até atingir o ponto de estrada.*<br />
* Para ver o ponto de estrada, colocar um pouco de doce num prato, passar uma colher de pau no meio, se fizer estrada está no ponto. Acrescente a amêndoa palitada.<br />
Guarde em frascos esterilizados.<br />

Adoro chutneys e faço com muita frequência. Para quem não sabe os chutneys são compotas agridoces, feitas com várias especiarias e que servem para acompanhar pratos de carne, de peixes , queijos, etc, são tradicionais da cozinha indiana que eu sou grande fã.<br />
Esta receita de chutney do tomate, que vem na ultima revista do Jamie Oliver, é mais fácil de se fazer e os sabores são mais subtis.<br />
Eu optei por fazer esta receita no fogão mas dá para fazer igualmente na bimby.<br />

Ingredientes para 1 frasco<br />
250 grs. cebola roxa, laminada<br />
500 grs. de tomate grosseiramente picado (pode usar várias misturas de tomate)<br />
1 malagueta vermelha sem sementes, fatiada<br />
75 ml. de vinagre de vinho tinto<br />
140 grs. açúcar amarelo<br />
<br />
<br />
Coloque todos os ingredientes numa frigideira, tempere a gosto e misture.<br />
Deixe apurar, sem levantar fervura, por 30-40 mns ou até ficar em geleia.<br />
Deite num frasco esterlizado e deixe arrefecer.<br />
Conserva-se até 4 semanas no frio.<br />

Ingredientes para a cobertura de chocolate:<br />
200 grs. açúcar em pó<br />
20 grs. cacau em pó<br />
30 grs. manteiga<br />
25 grs. leite<br />
<br />
Preparação bolo;<br />
Pré-aquecer o forno a 180Cº.<br />
Untar e polvilhar com farinha uma forma de bolo (eu uso o Spray &Go da Fula.<br />
Colocar a beterraba no copo da bimby e pique 5 seg / velocidade 6-7. Reserve.<br />
Colocar o chocolate em copo de mistura e rale 10 seg / velocidade 8. Reserve.<br />
Colocar a manteiga no copo da bimby e derreta 2 min / 70 ° C / velocidade 2.<br />
Adicionar a beterraba reservada ,o chocolate, a farinha, o açúcar, o fermento, os ovos, a baunilha e o cacau em pó e misturar 20 seg / velocidade 5, ou até ficar bem misturado.<br />
Coloque na forma e leve ao forno cerca de 35mns.<br />
Deixar o bolo arrefecer uns 5 mns na forma e depois colocar numa grade até arrefecer.<br />

Uma das coisas que mais gosto de fazer na cozinha são as conservas. Desde doces a chutneys, fruta em calda ou picles, dá-me imenso prazer encher a minha despensa de cores e sabores!!! aproveito também para ir preparando as ofertas de Natal.<br />
Costumo dar workshops de "canning", com dicas, truques e receitas, para que todos possam saber fazer as suas conservas.<br />
Agora que o tomate é Rei, e cá em casa todos adoramos tomate, é altura de o conservar de todas as formas possíveis, seja fazendo doce, chutneys ou tomate seco.<br />
Eu uso imenso tomate seco em pratos italianos, para rechear carnes, para fazer molhos, para acompanhar queijos.<br />
Fica bem mais económico fazê-lo em casa do que comprá-lo e não dá trabalho nenhum.<br />
Se os frascos forem bem esterilizados e se os tomates ficarem bem cobertos de liquido, conservam-se até 6 meses no frasco.<br />

Para esterilizar os frascos, lavá-los bem e colocá-los num tacho com água a ferver, e deixá-los ficar cerca de 10 mns ao lume.<br />

O livro tem receitas fantásticas, e eu sou fã do Gordon Ramsey. Gosto da comida dele, da variedade dos ingredientes que usa, o resultado final é sempre muito bom.<br />
Acabei por fazer a receita da forma tradicional e apenas usei a bimby para bater as claras em castelo.<br />
Fiz também uma alteração, na receita original diz para colocar no fundo da taça. framboesas frescas e 1 folha de hortelã, eu como tinhas apenas framboesas congeladas, optei por fazer um molho de framboesas. Ficou excelente.<br />

Ingredientes<br />
100 gr. chocolate branco<br />
300 ml de natas<br />
raspa de 1 lima + extra para guarnecer<br />
chocolate branco ralado, para guarnecer<br />
3 ovos grandes, só as claras<br />
50 gr. de açúcar<br />
150 gr. framboesa *<br />
3 pés de hortelã, com as folhas em pedaços finos<br />

* Eu optei por, levar cerca de 2 chávenas de framboesas congeladas com 2 colheres de sopa de açúcar, a lume brando, e fui mexendo até se tornar numa espécie de xarope, mas sem as framboesas se defazerem completamente.<br />
<br />
Caso opte pelo molho de framboesas, comece por o fazer, para que ele vá arrefecendo, enquanto faz a mousse.<br />
<br />
Parta o chocolate branco em pedaços e coloque-os numa taça resistente ao calor.<br />
Coloque metade das natas (150 ml) num tacho pequeno e aqueça até começarem a ferver.Deite imediatamente sobre o chocolate e mexa até obter uma mistura suave.<br />
Coloque a raspa da lima e o resto da nata noutra taça e bata até que as natas formem picos suaves. Incorpore ao chocolate branco derretido. Reserve.<br />
Bata as claras em castelo.Incorpore o açúcar, juntando 1 colher de sopa de cada vez, e continue a bater até a mistura ter 1 aspecto brilhante, suave e formar picos que mantém a forma.Com cuidado incorpore no chocolate.<br />
Eu bati as claras na bimby, com a borboleta colocada e o copo bem limpo, sem qualquer tipo de gordura, acrescentei também 1 pitada de sal para ajudar a crescer, 3 mns na vel. 3,5. No final do tempo, voltei a programar a vel.3,5 e fui colocando o açúcar, 1 colher de cada vez.<br />
<br />
Em 4 taças individuais ou numa taça grande, distribua as framboesas (reservando algumas para decoração) e esmague-as ligeiramente com 1 garfo. Com uma colher, coloque a mousse sobre as framboesas, decore com as framboesas, a raspa de lima e raspas de chocolate branco.<br />
Para o molho de framboesas, o procedimento é igual, tendo-se apenas atenção,para deitar a mousse com cuidado, de forma a que não se misture no molho de framboesas.<br />
Levar ao frigorífico, no mínimo umas 4 horas ou preferencialmente de 1 dia para o outro.<br />

Num prato colocar as sementes de sésamo e cobrir os lados do bife de atum com elas.<br />
Aquecer bem um grelhador e quando este bastante quente, pincelar os bifes de atum com azeite e colocá-los no grelhador cerca de 2mns de cada lado. O meio dos bifes de atum tem que estar meio cru.<br />
Retirar para um prato e temperar com o sal, a pimenta e o sumo de lima e regar com um pouco de azeite. Servir.<br />

Demolhe as folhas de gelatina em água fria<br />
Coloque a “Borboleta” na lâmina, deite as natas no copo e bata na Vel. 1 1/2 até começarem a engrossar, de seguida aumente para Vel. 3/4, até que estejam montadas em chantilly. Retire e reserve.<br />
Coloque o ananás no copo e triture 15 Seg., Vel. 7.<br />
Junte o açúcar, as gemas, o sumo de limão e o sal e envolva tudo uns segundos na Vel. 5.<br />
De seguida programe 8 Min. Temp. 80°, Vel. 3. Junte a gelatina previamente derretida no microondas por cerca de 5 segundos em 2 colheres de sopa da calda do ananás e misture. Deixe arrefecer um pouco.<br />
Junte com cuidado as natas montadas, ajudando com a espátula, de baixo para cima, muito delicadamente.<br />
Coloque a bavaroise numa forma molhada e leve ao frigorífico a gelar, no mínimo 3 horas.<br />

Ligar o forno a 180Cº.<br />
Colocar o azeite no copo e programar 5mns na Temp.100Cº/Vel.1. De seguida acrescentar os legumes e o chouriço e programar 7 mns na Temp.100Cº/Vel.1.<br />
Estender a massa folhada e colocá-la numa forma (eu aproveitar para usar mais uma forma nova e fantástica da Pyrex) picá-la com um garfo e deitar por cima os legumes e o chouriço cozinhados.<br />
Sem lavar o copo, deitar os ovos e as natas e programar 5seg/Vel.5.<br />
Deitar por cima da quiche e levar ao forno cerca de 15mns.<br />

Aqui fica a receita:<br />

Ingredientes para as cookies:<br />
130 gr. manteiga à temperatura ambiente<br />
150 gr. açúcar amarelo<br />
1 ovo<br />
150 gr. farinha<br />
1/2 colher chá bicarbonato de sódio<br />
1/2 colher de chá de fermento para bolos<br />
80 gr. pepitas de chocolate<br />
80 gr. flocos de aveia<br />

Pré-aqueça o forno a 180Cº. Forre um tabuleiro de forno (eu usei 2) com papel vegetal.<br />
No copo limpo coloque a manteiga, o açúcar e o ovo e bata 2mns/Vel.3.<br />
Adicione a farinha, o bicarbonato de sódio e o fermento e misture 10 seg./Vel.4.<br />
Adicione o chocolate e os flocos de aveia e misture 15seg./Vel.3. Com a ajuda de uma colher de gelado faça bolas com aprox. 20 gramas e coloque no tabuleiro, deixe cerca de 3 cm entre cada e leve ao forno cerca de 10mns. Retire e deixe arrefecer sobre uma rede.<br />

(Como as minhas não ficaram todas do mesmo tamanho, eu aparei as bolachas usando o copo da bimby e usei as sobras para misturar em outros gelados)<br />
Antes de rechear as bolachas, retire o gelado do congelador cerca de 15mns.<br />
Coloque 1 bola de gelado em cima da bolacha e cubra com outra presssionando um pouco.<br />

Ingredientes:<br />
1 base massa quebrada (é um almoço preguiçoso)<br />
20 grs, azeite<br />
1 embalagem de bacon aos pedaços<br />
2 alhos franceses partidos às rodelas<br />
3 ovos<br />
1 pacote de natas<br />
pimenta q.b<br />
sal q.b<br />
<br />
Ligue o forno a 220 Cº.<br />
Na bimby colocar o azeite e programar 5mns/temp.100Cº/Vel.1.<br />
Quando terminar o tempo acrescentar o bacon e programar 3mns/temp.100Cº/Vel.1.<br />
De seguida acrescente o alho francês e programe 5mns /Temp.100Cº/Vel. colher.<br />
Numa forma unte com óleo (eu uso o spray da Fula ) e coloque a massa quebrada, pique com um garfo e deite o recheio do bacon e alho francês.<br />
Sem lavar o copo, deite os ovos e as natas, tempere com sal e 1 pouco de pimenta moída na altura e programe 10 seg/Vel.5.<br />
Deite por cima do recheio.<br />
Leve ao forno a 220 Cº cerca de 20mns.<br />
